What do I have to do each month if an accountant does my books?

If an accountant does your books and you still do the gathering, nobody ever gave you a list of what the gathering consists of. You work it out from the questions that come back. These are written out properly, and they hold whether or not you ever use any software to do them.

→ Do I need bookkeeping software if I have an accountant? Usually not. What is worth fixing is the monthly gathering you do by hand before you hand anything over, and which of three situations you are in decides the rest.
